The Macallan Distillery uses a traditional, low-yielding barley called "golden promise". It uses very small stills (especially spirits stills) heated over Sherry fire which limit the quantities but promote the concentration of aromas. One of the characteristics of the Macallan style is also the full aging in sherry (or sherry) casks, where it acquires exceptional qualities of roundness and suppleness. This Macallan has matured for 18 long years exclusively in old oak barrels from Jerez, Spain. These barrels impregnated with Sherry Oloroso and handpicked give it great richness and great complexity.
