For Billecart Salmon champagne, it all started in 1818, in Mareuil-sur-Aÿ, when Nicolas François Billecart married Elisabeth Salmon. Nicolas François joins forces with his brother-in-law, Elisabeth's brother, who is passionate about oenology. The latter will be responsible for making the wines, while he will devote himself to the commercial part. For 7 generations now, the couple's descendants have applied themselves to respecting the oath of their ancestors: "to privilege quality, to aim for excellence".
